Grilled in the traditional way, eggplant is typically charred in a wood-burning oven. The high cooking temperature makes it easy to peel the skin off eggplant to reveal a smooth and smoky pulp that will be mixed with three other pantry ingredients: fresh lemon juice, tahini and salt, easily blending into an irresistibly smooth, luxurious and savory dip with an authentic Lebanese taste.
